How to make Magic Aloo (Potato) Fry

Looking for some side dish made out of potato, then, you have come to the right place. This magic aloo fry is a perfect side dish.

(1) The first step is to make magic masala Powder:

1. Take a pan, in it, add:

  • 7 to 8 dry red chillies.
  • 3 spoons of dhania (coriander)
  • 2 spoons of jeera(cumin)
  • 1 spoon of pepper
  • 1 piece of cinnamon
  • 2 cardamoms 
  • 1 star anise
  • 1 piece mace (javitri)
  • 2 bay leaves
  • 5 cloves
  • 1spoon kasuri methi (dried fenugreek leaves)
2. Dry roast the above ingredients.

3. In a mixer jar add:

  •  The dry roasted ingredients 
  •  2 spoons of red chilli powder
  •  2 spoons of anardana (dry pomegranate seeds)
  • 1 spoon black salt
  • 1 spoon amchur powder (dry mango powder)  
Grind the above into a fine powder (magic powder) and store it in a container.

(2) Cut  some potatoes (depending on the number of people you want to serve) into cubes and deep fry them, until they turn golden brown.

(3) Put the fried potatoes into a bowl and in it add:

  •  2 spoons of the magic powder
  • 1 spoon red chilli powder
  • 1 spoon anardana (dry pomegranate seeds)
Mix the above ingredients well.

(4) Then, take a pan heat 2 to 3 teaspoons of oil and add hot oil over the potatoes and mix well.

 Serve hot with mint chutney or mayonnaise!
